Week #6 Thursday Thirteen

13 Ingredients in Cheya's Summer Squash Sandwiches

1 1/2 Cups sliced yellow summer squash
1 1/2 Cups sliced zuchinni squash
1-2 carrots, grated
1/2 onion, sliced
1/2 green pepper, sliced
2-3 cloves garlic
4 oz sliced mushrooms
extra virgin olive oil
Basil pesto
salad dressiong, such as Sweet Vadalia Onion, Asiago and Peppercorn, etc.
sharp cheddar cheese, sliced
provolone cheese, sliced
Asiago or ciabata bread, sliced

1. Steam the squash and carrots in a little water and olive oil, stir in 2 tbsp pesto after a few minutes of cooking, continue cooking until tender.
2. Meanwhile, sautee the onion, green pepper and whole garlic cloves in olive oil (or butter). When the onion is transparent and tender, smash the garlic cloves with fork tines and stir in well.
3. Sautee mushrooms (I prefer butter for this).

To assemble sandwiches: (you can prepare these sandwich-style or open-faced)
1. Spread the bread with a little pesto and salad dressing.
2. Layer 1 slice provolone and 1 slice cheddar cheese on bread.
3. Top with the cooked vegetables. If desired, add sliced tomato (my daughter liked it with the tomato).

This hot sandwich is to die for!

Okay, I'm not that into vegetables, but I would like the tomato and provolone on bread. ;) Wait, that would be sort of like pizza, right?

I like a blog with a book theme, since they are one of the deep passions of my life. I'd love to talk books with you.

Yum, that sounds pretty good. I'd have to leave off the bell pepper, but other than that - yummy! :)

Just had to say a quick "hi" from India, booklogged! I miss reading your blog on a regular basis but I stop by whenever I can. When I return from Cochin ( a city in Kerala, a state in South West India), I hope to be able to do a little more blog reading; hopefully life won't be as hectic then as it is now. See you soon!

These sandwiches are delicious. We've now had them twice, but just as a warning, go light on the Sweet Vidalia Onion dressing; I do love the pesto spread on my sandwich in abundance! How have we never discovered pesto before now?!?!?

Sounds good, but I would have to leave off the bell pepper, squash, garlic, well, maybe I'll just do the provolone and tomatoes with some mushrooms with pesto. That does sound like pizza. Anyway, the bread sounds really good. Where do you buy it? I don't suppose it is lowfat?

framed, we bought the bread in SLC at Kneaders. They have a wonderful 12-grean bread, too, but the asiago was perfect for this sandwich.
